Mankoushe for breakfast – in Lebanon

What did you have for breakfast? Mine was a Mankoushe or Lebanese flatbread topped with Gebnee (cheese) and salad. The Lebanese eat Mankoushe, which is much like a pizza for a morning or mid-day snack and there are different toppings such as Zaatar (a mixture of pounded thyme and olive oil) or ground lamb or beef.

I was with a group heading for a hike on part of the Lebanon Mountain Trail in the Tannourine Cedar Forest Reserve and we stopped on the way to pick up a brunch-time snack. In the small village cafe, the oven was fired up and a production line going with dough being flattened through a rolling machine, toppings being spread on and put into the oven to bake until crisp. With a salad of tomato and fresh mint on top, I had one for the journey and another to keep me going later in the day. Delicious!
